This Guatemalan is a well-rounded washed coffee from the highlands — grown at altitude, processed clean, and roasted to show off what the region does best. It has the structure you'd expect from a high-grown Central American: bright but not sharp, with a body that sits comfortably in the middle. If you like your coffee honest and approachable without being dull, this is a solid choice.

The Roast

Roasted to a medium profile to preserve the brightness that high-altitude washed Guatemalans are known for. The washed process gives us a clean base to work with — there's no fruit skin interference, just the clarity of the bean itself. Heat probe data guides each roast to make sure the first crack development time stays consistent, which is where most of the flavour structure gets locked in.

About This Coffee

This lot comes from the highlands of Huehuetenango in western Guatemala, where farms sit between 1,500 and 2,000 metres. That altitude slows the cherry's development and builds density into the bean, which shows up in the cup as structure. It's fully washed, giving a clean, defined profile rather than anything fruity or wild.

Tasting Notes

Toffee sweetness sits underneath a mild citrus acidity, and the finish is clean rather than lingering. Roasted medium, it holds enough brightness to stay interesting without tipping into sharpness.

Brewing

It does well either way — as a filter through a V60 or AeroPress, or pulled as espresso. Go medium grind for filter methods and fine for espresso.

This Guatemalan blend is absolutely stunning, just a lovely rich almost chocolately feel to it,I've a number of different brewing methods at home and it's great in pour over, moka pot etc but is absolutely gorgeous as espresso in my flair espresso maker. This is probably the best bag of beans I've had and I've tried a few local roasters.
